Dine & Dash Penne Pasta with Farmer's Market Sauce

Quick penne pasta with Farmer's Market Sauce


8 ounces penne or other tubular pasta

2 teaspoons salt

2 tablespoons olive oil

8 ounces bulk sausage (breakfast, Italian, etc)

1 red bell pepper, chopped

3 medium tomatoes, chopped

1 tablespoon fresh oregano or basil (or 1 teaspoon dried)

½ teaspoon (freshly ground) pepper

¼ cup or so (freshly grated) Parmesan cheese


Bring a large pot of water to boil, and add salt. Add pasta, and cook according to package directions until al dente or done to desired taste.

Put the sausage in a wide, deep pan over medium high heat. Dice the bell pepper, adding it to the skillet as you do. Stir sausage, breaking it up and cooking the ingredients until peppers soften, about 10 minutes.

Meanwhile, core the tomatoes and chop them. When the peppers have softened, increase heat to high and add tomatoes. Stir and heat through, about 5 minutes. Not all of the liquid will have evaporated.

When the pasta is done, drain it and put it in serving bowls. Top with sausage mixture and sprinkle with cheese.
