Great Baking Bonanza's Youth Honorable Mention Winner

The Kentucky State Fair features many award-winning recipes, including the winner of the "Youth Honorable Mention" in the Great Baking Bonanza.

Nine-year-old Callie Freeman of Louisville shows how to make Lemon Berry Burst Cups.

Lemon Berry Burst Cups


1 cup milk, skim

1 cup heavy whipping cream, divided

1 - 4 oz. box instant lemon pudding mix

1 - 14 oz. can Eagle Brand Sweetened Condensed Milk

2 tablespoons fresh lemon juice

1 teaspoon fresh lemon zest

1 cup crumbled iced lemonade cookies

6 oz. fresh raspberries

6 oz. fresh blueberries

1 tablespoon sugar

Mint sprigs for garnish


In a stand mixer, whip the skim milk, Eagle Brand Sweetened Condensed Milk and instant pudding on low until well mixed. Add 1/2 cup heavy whipping cream and mix on medium-high for 4 minutes. Add in lemon juice and zest and mix 1 additional minute. Allow mixture to firm and chill for 5 minutes. Set aside. Whip remainder heavy whipping cream with 1 tablespoon sugar until stiff.

Cup Assembly:

10 - 2 oz. shooter-type glasses were used for this recipe. Place approximately 1/4-inch of crumbled cookies on bottom of each glass. Pipe a small amount of the lemon pudding mixture on top of cookies. Add 4 pieces of either raspberries or blueberries. Repeat layers with alternate fruit. Top with a layer of cookie crumbles. Garnish with whipped cream, berries and a mint sprig. Chill until ready to serve. Yields 10 - 2 oz. cups.
