Pig in a Pepper

(Stuffed Jalapenos)

20 Jalapenos (big)

8 oz Cream Cheese - softened

1 cup shredded Pepper Cheese

1 cup shredded Cheddar Cheese

20 Little Smokie Sausages

20 strips Bacon

Slice top off each pepper lengthwise and set top aside. Remove all seeds and rinse so the pepper looks like a canoe. Lay on a paper towel to dry.

In a separate bowl, combine all three cheeses. Mixture will be thick. Finely chop the tops of the peppers and add to cheese mixture.

Put a thin layer of cheese mixture in each pepper, insert a sausage to each and then cover sausage with more cheese to make a mound. Wrap each pepper with a strip of bacon and secure with a toothpick.

Place peppers on a cookie sheet and place under the broiler until bacon is crispy.
