chicken avocado tamale

LOUISVILLE, Ky (WDRB) -- Make delicious tamales at home with this easy recipe.

1 lb.

Kroger Deli Whole Roasted Chicken (shredded)
1-10 oz. can Kroger Enchilada Sauce 
1-15.5 oz. canKroger Hot Chili Beans (drained)
½ tsp. Kosher Salt 
1-10 oz. pkg. Kroger Produce Fresh Pico de Gallo 
1-8.5 oz. box Jiffy Cornbread Mix
1 largeEgg 
1-14.75 oz. can Kroger Golden Cream Corn (with liquid)
1Avocado (diced) 
1 cupKroger Mexican Shredded Cheese or Murray’s Pepper Jack (shredded)
  • Preheat oven to 375° & lightly spray a 9”X13” oven dish with nonstick spray.
  • In a medium bowl combine chicken, enchilada sauce, chili beans, salt & half the amount of pico de gallo.  Mix well to combine, pour in prepared oven dish & spread evenly.
  • In another medium bowl combine Jiffy, egg, creamed corn, diced avocado & other half of the pico de gallo. Stir well to combine & evenly pour over chicken mixture.  Sprinkle cheese evenly over the top.
  • Cover with foil & bake for 45 minutes.  Remove from oven, remove foil & bake for another 20-25 minutes.  Top layer should be browned & set.
  • Serve piping hot & enjoy!
