LOUISVILLE, Ky. (WDRB) -- Nothing says Kentucky State Fair like putting food on a stick.  The Kentucky Beef Council's Caitlin Swartz is happy to indulge the spirit of the fair. She's sharing a recipe for Country Fried Steak on a Stick --with gravy! 

Country Fried Steak on a Stick

(Adapted from a Beef It's What's for Dinner recipe) 

2 beef top-sirloin steaks, cut 3/4 inch thick (about 7 ounces)

1/2 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon pepper

1 egg, beaten

1 tablespoon water

1/2 cup unseasoned dry bread crumbs

1/4 teaspoon salt

1/4 teaspoon garlic powder

1/4 teaspoon ground red pepper

4 tablespoons vegetable oil

Wooden skewers (soaked one hour in water) 

Basic White Gravy 

¼ cup all-purpose flour 

½ teaspoon pepper 

½ teaspoon salt 

1 small cereal bowl of milk 

Remaining oil after frying 

Instructions: 

1. Slice sirloin steak across the grain into thin strips about 4 inches long. Pat steaks dry. 

2. Mix dry ingredients into a bowl. Mix egg and water into a separate bowl. 

3. Dredge steak in egg mixture and then flour mixture, and repeat the process. 

4. Heat oil into large nonstick skillet. 

5. Thread breaded steak slices onto a wooden or metal skewer. 

6. Place steak into heated oil, be cautious of splashing hot oil. Cook 3-5 minutes or until coating is crisp and golden and beef is medium rare (145°F), turning once. (Do not overcook.) Remove steaks; keep warm. Repeat with remaining oil, if needed, and steaks.

7. Once steaks are finished, allow oil to cool slightly. Mix in flour, stirring continuously to incorporate all remaining bits left behind in skillet to create a roux. Once roux is smooth in texture, pour in milk. 

8. Raise the heat slightly and allow milk to begin to thicken, should occur within 5-7 minutes. Stir continuously. 

9. Add salt and pepper just prior to pouring into serving dish.
