LOUISVILLE, Ky. (WDRB) --If there's a look for a "beer guy," Russ Meredith has it.

He has a healthy beard, a closet full of flannel shirts.

"It's delicious," he said.

His passion for brew has always coincided with who he is and what he does for a living.

He's worked at Against the Grain, BBC and Gordon Biersch.

Now, he's his own boss. His frothy favorites have inspired his entrepreneurial spirit.

"I decided to do something different," Meredith explained.

He's the owner of "The Beer Syrup Company."

"I realized there's not a single commercial producer for beer syrups," he explained.

So, he's changing that by producing several bottles of Pecan Nut Brown, among other flavors, at Pop's Pepper Patch near U of L.

The bottles are fancy with a wax top, and trendy labels.

The taste of the syrup is comprised of citric acid, sugar and of course beer.

If you're thinking of chugging it, think again. There's less than 1% alcohol.

"It's not necessarily like drinking a beer," Meredith explained.

Somewhere along the way, Meredith realized the mix of a brew and syrup made sense at breakfast.

"It can be used as a topping for waffles, ice cream, french toast," he said.

Dinner isn't excluded either.

"You can even use it as a glaze for meat, fish, and vegetables," Meredith told WDRB.

Beer fans at local watering holes are into the idea.

"I like syrup. I like beer. Why not?" asked one.

"I suppose the more beer, the better," said the other.

As for Meredith, he hopes his beer syrups become just another Louisville-made product known everywhere.

"It would be really, really awesome to walk into a restaurant in any of the 50 states, and have them say oh we also have beer syrup that you can use," said Meredith.
