Turning leftover chicken and rice into Chicken & Veggie Fried Rice

 

LOUISVILLE, Ky. (WDRB) -- Leftovers don't have to just be thrown away.

Kroger Chef Paul Dowell stopped by WDRB In the Morning to show us how leftovers from one meal can be used to make a delicious new meal without waste.

Chef Paul took a leftover rotisserie chicken & rice meal and created a Zero Waste Chicken & Veggie Fried Rice.

Zero Waste Roasted Chicken & Veggie Fried Rice

Makes 8 to 10 servings.

1 Tbl. Sesame Oil

2 Tbl. Kroger Unsalted Butter

2 cups Veggies (small diced) use any veggies you need to use up or excess

2 lrg. Eggs (scrambled)

2 cups Leftover Deli Roasted Chicken (pulled/chopped)

2 cups Leftover Cooked White Rice

2 Tbl. Lite Soy Sauce

2 Tbl. Green Onion (thin sliced)

1 Tbl. Toasted Sesame Seeds

  • Heat oil & butter in a large saute pan over medium high heat.
  • Add & saute veggies until almost tender, move to the side of the & add egg. Saute & chop egg. Mix egg & veggies together
  • Add chicken rice & soy sauce to veggie mix, mix well & saute to fry rice, turn until browned evenly & hot through.
  • Top with fresh sliced green onion & sesame seeds. Serve piping hot!

***The idea of this recipe is using leftovers from another meal to make a delicious new meal. This prevents leftovers from being thrown away needlessly.
