LOUISVILLE, Ky. (WDRB) -- Southern soul food comes to life in Catrina's Kitchen in everything from green beans to cornbread.

Former restaurant owner Catrina Hill took her special blend of southern seasonings and put them on the market. And her line of Catrina's Kitchen Southern Spices are a success story. She says they are finger licking good and will add flavor and punch to just about any food.  

She currently has three Kentucky Proud Products on the market. Her Southern Seasoned Flour, Fish and Vegetable Seasoning and A Little Somethin' Somethin' seasoning are being sold in Kroger stores across Kentucky. She plans to start selling a Candied Yam Mix and Sweet Sour Cream Cornbread Mix very soon.

Hill invited us into the kitchen to show us how to make a delicious Salmon Croquette.

Salmon Croquette Recipe:

2 cans of Salmon. Take the bone out of the middle of the salmon and pour juice into the bowl along with the salmon.

4 eggs

1 1/2 cup of Catrina's Kitchen Fish and Vegetable season.

1 1/2 cup of Catrina's Kitchen Southern Seasoned flour.

1 red or green bell pepper chopped.

1 onion chopped.

1/2 cup of Italian bread crumbs.

Place all of the ingredients in a bowl and mix together.

Pour 1 cup of oil in a skillet. When the oil is hot, make patties with the mix and fry in skillet. Turn the croquettes over when they are brown.

Potato Recipe:

4 Yukon gold potatoes chopped

1 diced onion

2 tsps olive oil

A Little Somethin' Somethin Seasoning

(Bacon and bell pepper optional)

Place the ingredients in foil and bake at 450 degrees for 45 minutes or until potatoes are tender.

Catrina's Kitchen, formally known as Dinner Is Done, was established in 1999. Dinner is Done catered to patrons who wanted homestyle cooking with an atmosphere to match. In 2007 Catrina added a banquet hall next door to the restaurant, taking her catering business to the next level!

Increasingly, Catrina began to receive requests for her breading and spices. Because of these requests, she decided to package and sell her breading seasoning and spices.

Due to her health, Catrina closed her business in 2011. In an effort to continue Catrina's legacy, her daughter, Corenza Townsend, and sister, Lesia Hill-Driver, decided to keep things going with Catrina as an active consultant.
