LOUISVILLE, Ky. (WDRB) — Packing school lunches and planning after-school snacks can be a challenge for busy families, especially when trying to find options kids will actually eat.
Kroger shared some simple, kid-friendly ideas on WDRB Mornings Wednesday that are easy to prepare and help keep students fueled throughout the school day and after the final bell.
From grab-and-go snacks to balanced lunchbox staples, the tips are designed to make back-to-school meal planning a little easier.
Loaded Baked Potato Slow-Cooker Soup Recipe
Ingredients:
- 6 large russet potatoes, peeled and cubed (about 4 lbs.)
- 1 yellow onion, chopped
- 1 carton (32 oz.) Simple Truth Organic™ Low Sodium Free Range Chicken Broth
- 1⁄4 cup Simple Truth Organic™ Salted Butter
- 2 teaspoons coarse salt
- 1 teaspoon black pepper
- 1 cup Simple Truth Organic™ 2% Reduced Fat Milk
- 1 1⁄2 cups shredded cheddar cheese, with more for garnish
- 3 tablespoons Italian parsley, chopped
- 1 cup sour cream
- 6 slices Simple Truth™ Uncured Hickory Smoked Bacon, cooked and crumbled
- 2 green onions, chopped
Directions:
- Combine potatoes, onion, broth, butter, salt and pepper in a large slow cooker. Cover and cook on low for 8 hours, or until potatoes are tender.
- Mash mixture until potatoes are coarsely cut and soup is slightly thickened. Stir in milk, cheese, parsley and sour cream and let warm for 15 minutes.
- Sprinkle with bacon, extra cheddar cheese and green onions before serving.
