LOUISVILLE, Ky. (WDRB) -- Summer fruits are great to eat fresh. But summer is a great time to incorporate that natural sweetness into a more healthy dessert. Home Cuisine's Mae Pike shares a versatile recipe for a mango and fresh berry crisp that doesn't add any sugar.
Home Cuisine's No Sugar Added Mango and Fresh Berry Crisp
Serves 6
1 cup Mango, peeled and diced
1 cup fresh blueberries,
1 Cup Fresh raspberries,
1 Cup Fresh blackberries,2 teaspoons dry stevia*
1 1/4 cup oats
1/2 cup White Whole Wheat flour (okay to omit for gluten-free)
1/4 cup sliced almonds
1/3 cup melted coconut oil
1 teaspoon Cinnamon
vanilla ice cream (optional but highly recommended)
Preheat oven to 375 degrees. Lightly grease a 8-inch square baking dish with cooking spray.
In a medium bowl stir together Mango pieces, berries, Cinnamon and 1 teaspoon stevia. Pour into prepared baking dish.
In another medium bowl stir together oats, flour, almonds, remaining teaspoon of stevia and coconut oil.
Sprinkle oat mixture over the fruit. Bake for 1 hour or until fruit is bubbling and topping is golden brown.
