LOUISVILLE, Ky. (WDRB) -- The so-called "caveman diet" is the latest trend for healthy eating.  And the Paleo omelette "muffin" is a great way to get breakfast ready to go. 

Home Cuisine's Mae Pike shows the easy steps to putting together a complete meal packed with protein and veggies. 

Paleo Omelette "Muffins"

-makes 6 muffins

6 slices SUGAR FREE Bacon, cooked 

baby spinach 

6 medium eggs 

1 tsp oregano 

1 Tablespoon tomatoes 

1 tablespoon chopped peppers 

INSTRUCTIONS 

Grease a muffin tin and preheat the oven to 350 degrees.

Crack the eggs into a bowl, whisk until combined and add the oregano.

Crumble cooked bacon and place in each muffin cup, place one handful of spinach on top of bacon. 

Pour the egg mixture on top and then add tomatoes and peppers or any other toppings. 

Bake in the oven for 20 minutes

NOTES 

This is a great recipe to make in big batches as the muffins will keep for a couple of days in the fridge. You can either eat them cold or reheat them in the oven / microwave to warm them through.
