LOUISVILLE, Ky. (WDRB) -- All the flavors of Mexican food come together in an easy crockpot soup recipe. Kroger Chef Paul Dowell shows the easy steps to making his Slow Cooked Chicken Tortilla Soup. 

Slow Cooked Chicken Tortilla Soup

Makes 10 to 12 servings.

Soup    

1-16oz. pkg. Simple Truth Natural Chicken Tenders

1-32 oz. pkg. Simple Truth Free Range Chicken Broth

2-14.5 oz. cans Kroger Stewed Tomatoes (with Juice)

1-16 oz. jar or 2 cups.    Private Selection Restaurant Style Salsa

2-15 oz. cans Kroger Black Beans (drained & rinsed)

2-12 oz. pkgs. Kroger Frozen Golden Sweet Corn

1 Tbl. Kroger Ground Cumin

1 Tbl. Simple Truth 9 Chili Powder

1 tsp.    Kroger Garlic Powder

To taste Salt & Pepper

    

Toppings:

Private Selection Thin Tortilla Chips

Kroger Deli Yucatan Guacamole

Kroger Sour Cream

Kroger Mexican Style Shredded Cheese 

    

Place chicken tenders in the bottom of a large crockpot.

Pour chicken broth, tomatoes, salsa, black beans & corn over top of the chicken.

Add in all season but the salt & pepper.  Stir seasonings into the soup, leaving the tenders at the bottom.

Set the crockpot too high for 4 hours or low for 8 hours.  Remove tenders, shred & add back into the soup.

Serve soup piping hot with crunchy tortilla chips added on top!  Also great with guacamole, sour cream & some fine shredded cheese.
