LOUISVILLE, Ky. (WDRB) -- It's been in business for nearly 100 years. Producing a unique product in Louisville, that the entire world can enjoy.

"You wouldn't think Kentucky and caviar and that's what my dad was able to accomplish," said Lauren Shuckman, production manager at Shuckman's Fish Co and Smokery.

Lewis Shuckman has been packing the product his entire life.

"He made people realize wow you can get caviar in Kentucky," said Lauren Shuckman.

Lewis on the other hand, made it accessible, and affordable.

Lauren Shuckman said, "Now it's not just a rich people thing it can get in the hands of anyone."

But Shuckman's didn't always deal with the delicacy.

Lewis Shuckman said, "My grandfather bought that building at 1601 West Kentucky and turned it into Shuckman's Meat Market and Grocery and that was back in 1919."

The company took it's product in a new direction, when they moved to a storefront in West Louisville.

"We moved from protein such a beef pork veal and lamb to fish and seafood, because of Americans eating habits back in the late 70's early 80's and we've never looked back," said Shuckman.

Pushing 100 years, Shuckman's Fish and Smokery is still a small operation.

"We're four generation now and my daughter Lauren is in production, my wife Vicky she's in the office and I do sales and marketing and it's just great," said Shuckman.

Trays of filets are hand cut every day. The freshly sliced salmon is a hot commodity in Louisville, and across the country.

Shuckman said, "We've one of the few companies in the country that not only processes and smoke fish products but we pack caviar all under one roof."

They even distribute it. Stacks of smoked salmon are sealed, stickered, and ready for shipping. Sharing this family secret with the world.

Lauren Shuckman said, "We've never had someone else come in and take it over, it's always been run by my family and that means a lot to me."
