LOUISVILLE, Ky. (WDRB) — Looking to make Father's Day extra special? Kroger shared some inspiration on WDRB Mornings with grilling recipes designed to help families celebrate Dad in a delicious way.
Whether you're planning a family barbecue or a simple meal at home, the recipes offer plenty of ideas for making Dad feel appreciated while enjoying great food with loved ones.

Fanfare Firecracker Shrimp
Ingredients:
- 2 pounds 31/40 count shrimp, peeled (leave tail on)
- 1⁄4 cup Fire Cracker Seasoning*
*Ingredients for Fire Cracker Seasoning:
- 1⁄2 cup Extra Virgin Olive Oil
- 1 lime, juiced
- 4 tbsp. paprika
- 2 tbsp. granulated garlic
- 1 tbsp. curry powder
- 1 tbsp. cumin (ground)
- 1 tsp. red pepper
- 1 tsp. white pepper (ground)
- 1 tsp. chipotle ground pepper
- 1 tsp. cayenne pepper
- 1 tbsp. kosher salt
- 1 package metal skewers
Optional Garnish:
- 1 small bunch cilantro chopped (fine)
Directions:
- Peel shrimp leaving tail on. Divide shrimp evenly among the metal skewers. Set skewered shrimp aside.
- To make the Fire Cracker Seasoning: In a bowl, combine olive oil, lime juice, paprika and remaining ingredients. Stir well.
- Brush fire cracker seasoning on both sides of skewered shrimp.
- Cook on a hot barbecue grill for about 4 minutes per side or until shrimp turn white/pink, and tender.
- Serve immediately.
Murray's Grilled Halloumi Skewers
Ingredients:
- 8 ounces halloumi cheese, cut into 1” cubes
- 3 spicy green peppers, stems and seeds removed, cut into 1” squares
- 2 red bell peppers, stems and seeds removed, cut into 1” squares
- 1 zucchini, sliced into ½” segments
- 2 shallots, skin removed and cut into ½” squares
- 2 cups cherry tomatoes
- 1 lemon, zested and juiced
- 1⁄2 bunch mint, leaves roughly chopped
- 1⁄4 cup olive oil
- 2 tablespoons sea salt
Directions:
- In large mixing bowl, toss vegetables with lemon juice and zest, olive oil and salt. Let marinate at least 15 minutes.
- Preheat grill or grill pan over medium heat. Note: If using wooden skewers, soak in water at least 20 minutes.
- On skewers, arrange cherry tomato, green pepper, shallot, red pepper, halloumi and zucchini, repeating until everything has been used.
- Grill each skewer about 5 minutes per side, until vegetables are just cooked and cheese has grill marks.
- Garnish with chopped mint.
Parmesan Ranch Grilled Potatoes
Ingredients:
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1⁄4 cup grated Parmesan cheese
- 1 package (0.4 oz.) dry ranch dressing mix
- Vegetable oil
Directions:
- Heat gas or charcoal grill.
- Cut each potato lengthwise into 8 wedges. Place in large bowl; toss with olive oil.
- In small bowl, stir together Parmesan cheese and ranch dressing.
- Sprinkle cheese mixture over potatoes; toss gently to coat.
- Carefully brush vegetable oil on grill rack.
- Place wedges over medium-high heat on grill. Cover and grill about 12 minutes, turning 3 times, until golden brown and tender.
- Refrigerate leftovers.
Caramel Apple Cobbler Foil Packets
Ingredients:
- 2 large Honeycrisp apples, diced into ¼ inch cubes
- 1 tbsp. Butter, cut into 1/8” cubes
- 2 tbsp. Sugar
- 2 tsp. cornstarch
- 1⁄4 cup Butter, cut into 1/8” cubes
- 1⁄2 cup Light Brown Sugar
- 1⁄4 cup Old-Fashioned Rolled Oats
- 1⁄4 cup All-Purpose Flour
- 2 tsp. Ground Cinnamon
- 1 tsp. pumpkin pie spice
- 1 jar caramel sauce
- 1 container whipped cream
- 1 container Vanilla Ice Cream
Directions:
- Preheat your oven to 450°F or a grill to high heat. Place two large aluminum foil sheets on the counter and spray with cooking spray.
- In a medium bowl, add all apple layer ingredients. Use a fork to cut the butter into the mixture, then distribute the apple mixture between the two sheets.
- In the same bowl, add the crumble topping ingredients, and stir to combine. Use a fork to cut the butter into the mixture then sprinkle on top of the apples.
- Seal up the packets tightly to trap the steam in. Cook in the oven for up to 15 minutes or the grill for up to 10 minutes. You’ll want to check every five minutes to ensure it doesn’t burn.
- Allow the packets to rest five minutes, open up carefully, then top with caramel sauce, whipped cream, or ice cream if desired.
