LOUISVILLE, Ky. (WDRB) — The Fourth of July is just around the corner, making now the perfect time to start planning your holiday cookout. Whether you're hosting a backyard barbecue or gathering with family and friends, Kroger has easy recipes to help make your Independence Day menu a hit.
Kaylee Bliss with Kroger stopped by WDRB Mornings to share simple grilling recipes and entertaining ideas ahead of America's 250th birthday celebration. Check out the recipes below and get inspired for your Fourth of July feast.
Grilled Blueberry and Brie Chicken Flatbread
Ingredients:
- 2 cups water
- 1 pint raspberries, washed
- 1 cup Granulated Sugar
- 1 artisan flatbread
- 1 cup cooked chicken, bite-size pieces
- 5 ounces Brie cheese, sliced
- 1⁄2 cup blueberries, washed
- Basil, chopped for garnish
Directions:
- In a small saucepan, bring water to a boil. Add the raspberries and sugar. Allow to boil for 45-60 minutes.
- Preheat grill to medium-hot heat.
- Place flatbread on a cutting board. Spread the chicken evenly, then top with Brie and blueberries.
- Cook for 3-4 minutes, until the cheese has melted and heated through. Place on cutting board after cooked.
- Drizzle the raspberry compote over the grilled flatbread and serve.
- Refrigerate leftovers.
Ingredients:
- 1/2 cup Simple Truth Organic™ Olive Oil
- 1 tablespoon balsamic vinegar
- 2 containers (10 oz. each) Simple Truth Organic™ Grape Tomatoes, halved
- 6 cups watermelon, cubed
- 1⁄2 red onion, finely diced
- 1 cup mozzarella balls
- 1 cup Simple Truth Organic™ Basil, cut into ribbons
- 1 teaspoon salt
- 1 teaspoon pepper
Directions:
- In a small bowl, whisk together oil and vinegar. Set aside.
- In a large bowl, combine tomatoes, watermelon, red onion, mozzarella and basil. Add vinaigrette; toss to combine. Season with salt and pepper. Serve immediately. Refrigerate leftovers.
Ingredients:
- 1 bag (12 oz.) white chocolate baking morsels
- 1 tablespoon shortening
- 16 strawberries, washed and cleaned
- Blue sanding sugar
Directions:
- Line baking sheet or plate with wax or parchment paper.
- In small saucepan, heat white chocolate morsels and shortening until melted. Stir until smooth.
- Using fork, dip strawberries, one at a time, into melted chocolate, leaving tops uncoated.
- Dip into shallow bowl of sprinkles or sanding sugar. Place strawberry on prepared baking sheet to dry.
- Repeat with remaining strawberries. Refrigerate until serving.
Ingredients:
- 8 graham crackers, halved
- 2 ounces Ghirardelli® White Chocolate, chopped
- 2 tablespoons red, white and blue sprinkles
- 8 assorted Ghirardelli® Filled Chocolate Squares
- 8 marshmallows
Directions:
- Line baking sheet with waxed paper. Arrange 8 graham cracker halves on baking sheet.
- Place white chocolate in small microwave-safe bowl. Microwave at 50% power 30-60 seconds, or until almost melted, stirring every 30 seconds. Stir until smooth.
- Drizzle melted chocolate over graham cracker halves, top with sprinkles. Refrigerate 10 minutes or until set.
- Arrange chocolate squares over remaining graham cracker halves.
- Toast marshmallows over a campfire. Place toasted marshmallows on chocolate squares; top with decorated graham cracker halves.
