Kale is getting a lot of attention for being a so-called "super food." Kroger's Chef Paul Dowell is offering up a Kale and White Bean soup as a healthier choice for game day. It's a soup that is filling, tasty, and healthy.
Kale and White Bean Soup
1 pound Turkey Smoked Sausage (sliced)
1 TablespoonOlive Oil1Large Onion (small dice)
3 ribs Celery (small dice)
3 Carrots (peeled and small dice)
3 quarts Chicken Stock
2-14 oz. cansWhite Beans (drained and rinsed)
2 teaspoons Kosher Salt
½ teaspoon Black Pepper
1 teaspoon Dried Thyme
1 teaspoon Paprika
1 teaspoon Hot Sauce
1 pound Kale (stems and center ribs discarded and leaves coarsely chopped)
In a large pot, sauté turkey smoked sausage in olive oil until lightly browned.
Add celery, onion and carrot and cook for 5 minutes or until tender.
Add stock, white beans, hot sauce and seasonings and bring to a boil.
Reduce to a simmer and stir in kale.
Simmer another 15 minutes.
Great served hot with hot crusty French bread!
