LOUISVILLE, Ky. (WDRB) -- An Italian-inspired bar and distillery is coming to the Phoenix Hill neighborhood near NuLu, according to our partners at Louisville Business First.
Prova Spirits will produce and serve Italian-inspired liqueurs including limoncello, vermouth, aperitivos and amaros. The distillery will also produce vodka.
The distillery will be located at 917 E. Liberty Street in the same complex as Video Kitchen and Parlour NuLu. It will be a 2,800-square-foot space.
There will be a production facility and a 69-seat bar with a small outdoor patio.
"Louisville has a lot of bourbon already, and a lot of the people that own those companies have industrial, corporate backing that I don't have,"Ā Prova Spirits founder Giuseppe Paoulos said to Louisville Business First. "So, my thought process was, āWhy don't we focus on the other ingredients and the other products that go into cocktails.'"
Paoulos, who grew up in Chicago after his family immigrated to the U.S. from Italy, referred to the business as a nano-distillery.Ā Paoulos' wife Saniya is Canadian.
Prova Spirits will have four employees besides the husband and wife combination. He said they have invested about $100,000 into Prova Spirits.
There isn't an opening date because they're waiting for final permits from the city.
