LOUISVILLE, Ky. (WDRB) -- Noah's Kitchen, a new "upscale casual" restaurant, is coming to Louisville's East End. It opens June 18, 2025, and charity is on the menu.

Whether you're buying breakfast, brunch, lunch, or dinner, all of the restaurant's profits go back to the community.

"When I stopped clinging to my money and I started giving it away, my heart grew exponentially," Adam Ursprung, Noah's Kitchen Owner, said.

Ursprung is cooking up change at Noah's Kitchen, which is named after Noah's Ark. It's located at 9850 Von Allmen Ct #101.

For years, Ursprung has owned a Steak and Shake just down the road. However, he's felt God calling him to serve more than just meals recently.

"It's time to go to work for The Kingdom," Urspring said. "He just spoke to me and said, 'You're gonna do this,' and I've never been happier. I've never been more fulfilled."

Noah's Kitchen offers everything from omelets and salmon eggs benedict to smash burgers, New York-style pizza, and chicken sandwiches.

Every meal comes with a side of generosity, because Ursprung isn't making a profit. He plans to dish thousands of dollars back out into the Bluegrass State.

"We have to pay our rent," Urspring said. "Once we get that covered, all of our expenses, any profit goes to the organizations we support."

Ursprung will fork over the funds to Kentucky nonprofits focused on human trafficking, foster care and adoption, and addiction recovery. This includes Refuge for Women, Sunrise Children's Services, and Hope Rescued.

Urspring also plans to spread the wealth to Northeast Christian Church. An executive pastor for the church said the money will go toward cleaning up Jefferson County and Oldham County school grounds and uplifting staff members with hand-written letters.

"We get the privilege of beautifying 64 schools in July," Jon Lee said. "One of the unique opportunities that we have is to 'blitz' the breakrooms for all of our school teachers. This year, we will be 'blitzing' our school buses as well, so all those bus drivers will get a sweet note from somebody in the community that cares about what they do as well."

Ursprung plans to turn up the heat the longer Noah's Kitchen stays in business. This year, he has "no doubt" the restaurant will give away $60,000. In 2026, he's aiming for $200,000 bucks.

"We want to open up a second restaurant next year," Urspring said. "The goal will be to give away $500,000 each year after that."

He said God has "truly blessed" him with a successful Steak and Shake franchise already. He believes he wouldn't be any happier making money from Noah's Kitchen.

"Happiness doesn't come from possessions," he said. "Happiness comes from serving others. If people look at their money a little bit less importantly and they start helping others, I think that the happiness of our community will grow."

While giving back is a priority, Urspring wants the business to also be known for great food and the best service in Louisville. He hopes Noah's Kitchen will offer platefuls of purpose as people dine and donate. 

"Our tagline is 'serving up love," Urspring said. 

Noah's Kitchen will have a ribbon cutting ceremony on June 18, 2025. The restaurant is having a "soft opening" with "limited hours" until then.

This includes two fundraiser events on June 5 and June 6 from 5:30 to 9 p.m., which will be "happy hour inspired." Reservations are required.
