LOUISVILLE, Ky. (WDRB) -- A Florida-based butcher shop is on track to open a location in Louisville's east end this October, according to reporting from our partners at Louisville Business First.
Southern Steer was founded in 2013 in Clearwater, Florida, by Greg Snyder. He told Business First he plans to open Louisville's first Southern Steer at 12907 Factory Lane, inside the Anchorage Plaza Shopping Center in October.
Southern Steer specializes in prime cuts of meats from sustainable and domestic sources, according to its website. It will stock beef, chicken, pork and pre-prepared appetizers, sides, desserts, meals to-go and marinades.
Snyder said 30 more locations will open soon, including 10 in the next seven months. Right now there are eight stores operating in several states.
The space in the Anchorage Plaza measures 1,819 square feet and will be a franchise location. Snyder said the cost to open a franchise can range from $350,000 to $650,000.
At this time, Southern Steer is not releasing the identity of the Louisville franchisee.
Aside from high-quality products, Snyder said he believes his business expansion has been helped as less grocery chains no longer carry fresh cut meats.
Southern Steer also caters to individual customers.
"We're a full service butcher shop," Snyder said. "We specialize in custom cuts. So if you come in and want something a little different than what you see in the meat case ready to go, we’ll custom cut it for you right there," Snyder said. "People want to know where they’re getting their meat from. There’s not a lot of disclosure in the grocery stores."
In a twist, Snyder started Southern Steer after a career at Bonefish Grill, where he was a managing partner and also cut a lot of fish but not much meat. He said he was inspired to open his own butcher shop after he saw how popular local butchers were in the northeast and noticed Florida didn't have many butcher shops.
So Snyder opened his first Southern Steer in Clearwater, followed by another location in Sarasota. He then began franchising the brand.
He said other franchisees told him about the high-traffic location on Factory Lane, so he decided to open his first store there. He said a second Louisville store is also in the works, but a location has not yet been chosen.
