LOUISVILLE, Ky. (WDRB) -- A new restaurant is now open near the University of Louisville in the St. Joseph neighborhood.
According to our partners at Louisville Business First, the Parkway Diner replaced the historic Cottage Inn on Eastern Parkway. One of the new owners, Christopher Seckman, is the former owner of restaurants like the North End Cafe, The Slice and La Suerte.
Despite them being closed, Seckman said many fan favorites live on at the new diner.
"A restaurant is like a living organism," Seckman told Business First. "It changes and grows. It'll tell you what it wants to be. There is very specific food that they are eating over here, so we're still a work in progress. We got counter service up last week. (The previous owners) were not using that."
The Parkway Diner is open for breakfast and lunch daily.
