Paleo diets are based on the simple premise that if cavemen didn't eat it, you shouldn't either. Home Cuisine's Mae Pike shares her recipe for a morning muffin that's a little more healthy.

Paleo Orange Muffins

Ingredients:

DRY

1 cup coconut Flower, sifted

1/3 cup almond meal

1/2 tsp baking soda

1/4 tsp salt

WET

5 eggs

1/3 cup pure Maple Syrup

1/4 cup extra virgin olive oil

2 tsp pure vanilla extract

zest and juice from one orange

Instructions:

1. Preheat over 350F

2. Whisk dry ingredients

3. Add wet ingredients to dry, blend with a hand mixer

4. line muffin tins, makes 12

5. Bake 20 mins, until a toothpick comes out clean
