Wasabi, formerly Hen House Café and Provisions

LOUISVILLE, Ky. (WDRB) — The restaurant space at 4864 Brownsboro Rd. is set for its third name and concept change in less than two years, according to our partners at Louisville Business First.

Wasabi — a Pan-Asian restaurant group currently operating two locations in Elizabethtown, Kentucky — plans to open its first Louisville location in the Brownsboro Road Space later this summer.

Co-owner Dylan Lin purchased the business from chef David Danielson, a former executive chef at Churchill Downs who went on quite the journey with the restaurant space.

Danielson purchased what was then Anoosh Bistro from founder Anoosh Shariat in April 2024, rebranding the restaurant as äta, a nod to his Swedish heritage.

However, increased construction around the area significantly reduced customer traffic. According to Danielson, congestion from the project contributed to a 35% decline in dinner service due to people avoiding the area.

He pivoted once again and rebranded the restaurant into a breakfast and brunch space called Hen House Café and Provisions, which is when Lin and  Wasabi stepped in.

Lin said he plans to open Wasabi in June or July, after some interior updates to the space.

"We think it’s a pretty good neighborhood, and the hospital is coming up, so that’s what attracted us."

Lin said he and his partners are not concerned about about ongoing construction affecting business performance.

Wasabi's men includes sushi, hibachi bento boxes and Chinese dishes, Louisville location also expected to include select Thai, Vietnamese and Korean options. Prices are anticipated to range from $15 to $70.

"For every single different cuisine, we have a professional chef," Lin said. "They’re doing every single part, so there’ll be zero worry about us having so many options."
