A southern Indiana judge sentenced Joseph Oberhansley on Tuesday to life in prison without parole.
He admitted that he confessed to killing Blanton near the end of a three-hour police interview, but said he did so because, "I just started going along with detectives."
According to court documents, he allegedly removed, cooked and ate some of her organs before he was arrested.
Oberhansley has maintained his innocence from the beginning, and repeated that claim before going into court Friday morning.
The jurors are to be sequestered for the duration of the trial.
