LOUISVILLE, Ky. (WDRB) — Shahar Café built its name on vegan comfort food. Now, the Shelby Park restaurant is putting meat on the menu.
According to our partners at Louisville Business First, the restaurant began offering grass-fed beef and organic chicken Monday at its location on Logan Street.
The new proteins can be substituted on some of Shahar's burgers and other menu items. Burgers start at $9, with a $4 option to turn them into a meal.
Co-owner Vikrant Multani said the change comes as the cost of vegan ingredients continues to rise and fewer customers are seeking plant-based food.
The restaurant's menu will still feature its vegan burgers, sandwiches, wings and all-day breakfast. Shahar will also remain dairy-free and nut-free and continue to offer gluten-free options.
The restaurant is adding a separate flat-top grill for the meat to keep it away from the vegan food.
Multani said the idea also came from hearing from families who have different dietary preferences. If one person is vegan but the rest of the family isn't, the group may choose another restaurant.
Shahar's decision comes as several Louisville vegan restaurants have closed in recent years, including V-Grits, Cosmic Bird and Morals Café.
Multani told LBF the goal is for Shahar to remain known as a vegan restaurant that also has meat options — not a meat restaurant that happens to serve vegan food.
