Summer means picnics. But picnics are usually full of calories, salt, sugar and fat.

For example, just one piece of extra crispy fried chicken breast from Kentucky Fried Chicken packs 510 calories, 33 grams of fat, and 1250 milligrams of sodium.

Mae Pike joins us with a few options that will keep you from ditching your picnic or your diet. 

She suggests grilled chicken with a flavorful peach salsa.  

She also offers a more healthy Cabbage Crunch Slaw, which skips the mayo for a dash of sweetness.

Peach Salsa

5 ripe peaches, pitted and diced

Salt and pepper to taste

1 chipotle pepper in adobo plus 1 to 2 teaspoons adobo sauce

1 Medium Red Onion diced

1/4 bunch cilantro, chopped

2 Ripe Mangos Peeled, and diced

Splash fresh squeezed Lime Juice

Mix the above and chill.  

Will hold for up to 2 days

Healthy Cabbage Crunch Slaw

8 cups green cabbage, shredded (1/2 a large head)

1 teaspoon black sesame seed, toasted

4 scallions, sliced with some green stems

1/4 cup sliced almonds

Honey Dressing

1/4 cup canola oil

2 tablespoons apple cider vinegar

1 tablespoon Agave Nectar

salt, to taste

Directions:

1.  Toss all ingredients together and refrigerate until ready to serve.

2. Honey Dressing: Mix cider and honey together. Pour in oil drop by drop and whisk until emulsified. Chill if not using right away. Before serving, whisk again and pour over salad. Toss to coat.
