LOUISVILLE, Ky. (WDRB) — A new restaurant is bringing the flavors and traditions of Ethiopia to Louisville's Highlands.

According to our partners at Louisville Business First, Mimi's Ethiopian Restaurant is scheduled to open Aug. 1 at 1534 Bardstown Road, next to the upcoming Prado 264 restaurant. The eatery is moving into the former Tacos D'Amor & More space.

Owner Mimi Woldetsadik, who was born in Ethiopia, told LBF her own restaurant has been a longtime dream.

She said the menu will feature traditional Ethiopian dishes made from scratch, including favorites like doro wat, a chicken stew, and kitfo, a seasoned beef dish. The restaurant also plans to offer a traditional Ethiopian coffee ceremony, a cultural ritual that includes roasting, grinding and brewing coffee by hand.

Woldetsadik invested about $400,000 to renovate the more than 4,300-square-foot space. The full-service restaurant will include a bar, employ about 18 people and be open daily, serving dinner on weekdays and adding lunch service on weekends.
