Easy Chicken Cordon Bleu

Serves 8

8 Chicken Breast, Boneless and Skinless (thinly pounded)

8 Slices Prosciutto, paper thin

8 Slices Swiss Cheese

Salt & Pepper

1 c. Kentucky Kernel Flour

2 c. Italian Bread Crumbs

1 c. Grated Parmesan Cheese

1 tsp. Fresh Chopped Basil

1 tsp. Fresh Chopped Italian Parsley

¼ tsp. Fresh Chopped Oregano

¼ tsp. Fresh Chopped Thyme

2 Eggs

¼ c. Half and Half

2 Tbsp. Extra Virgin Olive Oil

Season chicken breast with s&p, then lay prosciutto on top then Swiss cheese.  Roll chicken into roulades then dredge in flour and shake off excess.  Make an egg wash with the eggs and half and half.  Also combine breadcrumbs, herbs, and parmesan and set aside.  Dip the chicken into the egg wash and then roll in the breadcrumb mixture.  Place the chicken on a sheet tray with the exvoo and bake in a preheated 350 degree oven until cooked through and golden brown (approx. 25 minutes) serve and enjoy.
