At the age of 75, Tina Escajeda never stops working, often rarely leaving the kitchen at Ramiro's Restaurant on Frankfort Avenue in Louisville.
Louisville business owners were challenged to adapt, or close, as they navigated shutdowns, restrictions, supply chain issues and staffing shortages.
Ramiro's Cantina is still taking donations that'll be loaded at its Frankfort Avenue location on Monday.
